All this sugarcane is cut by hand using traditional techniques, then turned to molasses at the local mill in Lautoka town. Our ode to the beauty and traditions of the Fiji Islands is double-aged: first in Fiji in ex-bourbon casks, then traveling by sea (what we like to call “dynamic ageing”) before arriving in France for the second stage of the double ageing process.
