Wilderness Trail is one of the craft distilleries in Kentucky that is pushing the envelope and yet respecting the extremely high-quality standards that have set Kentucky apart since the first Bourbons were distilled. The distillery developed as a natural progression out of their original business - yeast.

Before they were distilling for themselves, they provided an enormous catalogue of yeasts for distilleries, wineries, and breweries around the world. This expertise has allowed them to utilize the sweet mash process with stellar results.

While sour mash has been used for the sake of consistency for generations, sweet mash requires such careful handling of your fermentations that it's extremely difficult to get a consistent product batch after batch. But as Wilderness Trail's co-founder Dr. Pat says "Consistency is the mark of a pro."

And they are professionals when it comes to delicious whisky. This single barrel of high rye sweet mash bourbon is a big and spicy beast with complex wood spice and butterscotch on the finish.
